All my Orandas are male.
The only female died after laying eggs.

My males are "handsome" but all my 3 females are ugly. From last breeding season I only got two decent fish for keeping out of hundreds of fry.

I thought they are all buayas (crocs) and any female also can when they get horny.

Actually when your fish are mating, anything to look out for?
Like putting them in separate tanks?

The male will produce breeding stars along the tops of his pectoral fins, on his cheeks, and on his gill plates. He will get very horny, chases and nudge everyone in the tank, especially those females in the early stages. That's the right time to separate your seeds for breeding by putting them together in a basin, tub or anything large enough. The changes in environment is usually enough to trigger the process, normally happen at dawn and finish spawning by 10am. If you miss the first show, then try again every about 10 days or so as most females spawn in stages. If you are too busy to watch then just make a breeding mop out of those ruffian strings and drop it in. It will prevent your pair from gobble up all the eggs.
